Tasting Comment

You feel the flavor of pear and banana. When you drop it in your mouth, the first impression is sweet and clear. The acidity and the bitterness follow. The finish is very sharp. Any sweetness doesn’t remain on your tongue. This Japanese Sake has a good structure. The acidity is the backbone and a variety of tastes are blended well.

This brewery is located at Suzuka, Mie Prefecture. Suzuka is well-known for Suzuka Circuit where Formula 1 is held many times. However, Suzuka also has been famous for Japanese Sake Brewing since old days. The name of Suzuka was referred in the ancient article that introduced Ise Jingu (Ise Grand Shirne). “Suzuka is the place where tasty Japanese Sake is brewed.” A rice spices, Yamadaho, born in Mie. Yamadaho is the parent strain of Yamadanishiki. Most of breweries use Yamadaniksi to brew high quality Japanese Sake. This bottle won a gold prize in KURA MASTER 2022. KURA MASTER is a Japanese Sake Contest that has been held in France since 2017. The other bottle also won prizes. It is worth of trying at once.
