Tasting Comment

You feel the flavor of pear and banana. When you drop it in your mouth, you find it sharp and feel minerals in it. Some bitterness and a little sweetness follow. Although the first impression of this bottle is dry, a lot of tastes gradually come up. It is deep in flavor. The flavor is different, but this bottle reminds me of Soave, Northeast Italy wine.

This brewery is located at Suzuka, Mie Prefecture. Suzuka is well-known for Suzuka Circuit where Formula 1 is held many times. However, Suzuka also has been famous for Japanese Sake Brewing since old days. The name of Suzuka was referred in the ancient article that introduced Ise Jingu (Ise Grand Shirne). “Suzuka is the place where tasty Japanese Sake is brewed.” A rice spices, Yamadaho, born in Mie. Yamadaho is the parent strain of Yamadanishiki. Most of breweries use Yamadaniksi to brew high quality Japanese Sake. This bottle is the brother of HO NO TOMO. HO NO TOMO is easier to enjoy. This bottle is developed for who loves Japanese Sake. So, the flavor is milder and deeper. I recommend you should HO NO TOMO at the same time.
