The sharpness of this label represents the quality of the water. The label name, YAMAMOTO, comes from the owner’s name. He became the owner in 2007. At that time, the brewery was in the bankruptcy crisis. He decided to stop hire “Toji” and start their new brand. They made a miracle. They brewed tasty Japanese Sake in first year. This decision saved the brewery.
