Tasting Comment

You feel the flavor of citrus. When you drop it in your mouth, the sweetness of rice and the acidity of citrus spread. As the sweetness disappears, the bitterness comes and the finish is sharp. It is crisp and clear. This brewery is known to brew their Japanese Sake with super soft water. The pureness represents their Terroir very well. The style is close to that of Soave, Italian wine.

As most of breweries say, “Water is the heart of Japanese Sake.” This brewery’s Japanese Sake represents the Terroir of Hiroshima, especially super soft water. The name of “UGO NO TSUKI” comes from a phrase of “Nature and Life,” a famous Japanese book. The phrase, “Bright moon shines after the rainy sky. It covers over all on the earth.” They named this bottle with the wish that they would try to brew pure and beautiful Japanese Sake as it embodies the phrase. And, this bottle is brewed with Aiyama, a rice brand. It is released only at once a year. So, this is the bottle of desire that Japanese Sake lovers would like to drink.
