Tasting Comment

You feel the flavor of melon. When you drop it in your mouth, the sweetness and the freshness of fruits spread. Umami follows and you also find some bitterness in it. All tastes are well organized. This Japanese Sake has a good structure. And, even though it is Genshu, Japanese Sake that water is not added to, you don’t feel it so strong. You can enjoy it long time without being bored. When you make it warm, the flavor will decrease. Some may like it, but I don’t recommend it.

Because it has a good structure, strong tastes dish will part it well. Teriyaki and Yakitori will be a good partner.

White fish meuniere is also nice choice.

The tips of this Ippon

This brewery was established in 1597. They are located in Yamagata Prefecture. Yamagata Prefecture is known as one of the most famous rice production areas in Japan. It is also known as one of the snowiest areas. It means they can enjoy the advantages of climates, good quality rice and finest water. They say they could have been brewing Japanese Sake more than 400 years due to these advantages. The average temperature of Mogami River, whose water they use to brew Japanese Sake, is 11℃. What is interesting is that the temperature is the brewery’s recommended temperature to enjoy “Toko.” They say, “You might arrive at a simple conclusion: the natural temperature brings out the best.”
