It is usual that the tastes of Japanese Sake is classified in four types, Kunshu (薫酒), Soshu (爽酒), Junshu (醇酒), Jukushu (熟酒).

Kunshu (薫酒)
The flavor of fruits and flowers are the charm points. It is not so strong. You should enjoy it in chilled style. Daiginjo and Ginjo are usually belonged to this type.
Recommended temperature : 5℃~15℃
Representative brand : Dassai
Soshu (爽酒)
The flavor is mild and the taste is clear and crisp. It is not strong. The style is usually called “Tanrei”. Nama-Zake is also belonged to this category. The charm point is the freshness.
Recommended temperature : 5℃~10℃
Representative brand : Hakkaisan
Junshu (醇酒)
It is rich. It includes the sweetness and the acidity, Umami. Junmai-Shu, especially Kimoto, represents the taste. You can enjoy it in both a warm or cold style.
Recommended temperature : 5℃~50℃
Representative brand : Hakutaka
Jukushu (熟酒)
It is usually matured for years. The flavor is complex and texture is thick.
Recommended temperature : 5℃~25℃
