This brewery is located at Shiwa Town, Iwate Prefecture. Shiwa Town is known as the place where Nanbu Toji brewers were born. They are one of the largest three brewer groups in Japan. This brewery’s Toji is a woman, who is firstly qualified Nanbu Toji as a female. This Japanese Sake is “Nama Zake”. It is not heated to stop bacterial spoilage. Because bacteria still lives in it, it must be kept in refrigerators not to proceed bacterial spoilage. It requires a lot of our carefulness for keeping. But, it is worth, considering the fresh taste and the fragrant aroma. Japanese Sake is brewed in winter. And, “Nama Zake” is a first release in a year. The release season is spring. So, it will tell you the coming of spring.
