This brewery is founded in 1716. They had a long history, but they made a big decision in 2003. They began to brew their Japanese Sake with flower yeast. Flower yeast was found by Tokyo University of Agriculture. 10th owner studied flower yeast at the university and decided to use it after the graduation. His effort came into bloom. Their Japanese Sake with flower yeast won gold prize in National Japanese Sake Contest in 2004. They are now using 8 types of flower yeast. They say the number will increase more in the future.
