You feel the flavor of tropical fruits. When you drop it in your mouth, you will be surprised at how the taste is complex. It is sweet but also bitter. It is sharp but has Umami. It is clear but has the complexity. You can also feel minerals. A lot of aspects, even opposite ones, are included in one bottle. As time goes by, the flavor will gradually change. You can find the flavor of lemon instead of tropical fruits.

The tips of this Ippon

This brewery is located in Okazaki, Aichi Prefecture. It has been brewing Japanese Sake more than 300 years. Their Japanese Sake business made a success and they built a new brewery in Nada in Hyogo Prefecture in 1900. However, during World War 2, almost all of the brewery’s facilities were destroyed. They rebuilt their brewery and kept on brewing in Okazaki. “Nito” was a new born brand in 2015. The concept is to include a lot of opposites aspects. There is an English proverb, “If you run after two hares, you will catch neither.” There is a same meaning proverb in Japan. “If you run after two rabbits, you will catch neither”. “Nito” means “Two Rabits”. Their challenge made a success and they brew very complex and tasty Japanese Sake. It is worth of trying when you find “Nito”.
