MANSAKUNOHANA, Hiyaoroshi, Junmai-Shu (Hinomaru Jozo)

Tasting Comment

You feel the flavor melon and citrus. When you drop it in your mouth, the well-round acidity and the freshness of citrus spread. Because the bottle has been matured during summer, you would feel Umami more. You also find some sweetness in it, but the sharpness should taste more.

Taste Chart

Sweet-Dry: 2/5 (1 is sweet, 5 is Dry)

Fruity-Acid: 4/5 (1 is Fruity, 5 is Acid)

Light-Bold: 3/5 (1 is Light, 5 is Bold)

The bottle has the good sharpness, so grilled saury would be a perfect partner.

Yakitori would also part well. The acidity will match with the thick sauce.
