Tasting Comment

The color is faintly yellow and white lees is in the bottom. The flavor is like that of green apple. When you drop it your mouth, the well round sweetness of rice and the rich flavor spread. And, the sharpness and the bitterness balance the taste. You often feel heavy when you drink Genshu, Japanese Sake that water is not added to. However, you don’t feel this Japanese Sake heavy. You can enjoy the freshness and the smooth taste.

The tips of this Ippon

This brewery was founded in 1804. They are located in Fukui Prefecture. It holds a lot of snowy mountains that pour finest water. So, the governor recommended Japanese Sake brewing as a main industry in old days. They are descended from the stream. They keep passing on the tradition, but they also tried to be an innovator. They tried and succeeded in producing Daiginjo-Shu as a commercial product. This Japanese Sake is “Nama Zake”, so it is usually released in spring. The white lees are like snow on mountain in spring. You can enjoy not only the taste but also the coming of spring.
