Tasting Comment

You feel the flavor of grapefruits from your glass. When you drop it in your mount, the acidity, the sweetness and minerals spread. The acidity is the backbone of this bottle. It is very fresh and harmonizes all tastes. You can also feel some bubbles, which emphasizes the freshness. The bitterness like the peer of grapefruits remains as last part. It is a good accent because this bottle is very sweet.

The tips of this Ippon

The brewing style of this brewery is close to Bourgogne wine. Most of Japanese Sake breweries buy rice and brew their Japanese Sake. But, this brewery tries growing their own rice and brews bottles with their own rice. Their belief is “It all begins in the rice fields”. This phrase is in the top of their homepage. They also keep making challenge. They acquired a brewery in Bourgogne and stared to brew their wine. Their effort made success and their Japanese Sake is now listed in 3 stars restaurants in France. Their Japanese Sake is beyond standard Japanese Sake. You can find the new style in it. It merges the charms of French wine and Japanese Sake. This bottle is an entry bottle of “Kamoshibito”. However, it is worth trying at once. And, number printed in front label shows the rice produced area. If you input it google map, you can find where it is.
