The acidity and the sweetness, the bitterness follow. This bottle is more acid than Sunday Back nine. The acidity is the foundation of this bottle. It balances tastes and engraves structure. The tips of this Ippon

The brewery was founded in 1688. They originally brewed unrefined Japanese Sake, Duburoku. The method of modern Japanese Sake was founded in the latter half of Edo Era. What they focus on is growing rice in local areas. They made a study group with farmers, agricultural professionals and local agricultural associations. They award the best rice every year and the brewery brews Japanese Sake with the rice. Each chinse characters of “Ippaku Suisei” means First, White, Water, Made. The brand was named with a wish that the bottle which is brewed with white rice and good water will be No1. Omachi is the rice brand that was originally used to brew Japanese Sake. It is hard to grow, so it gradually disappeared. However, the characteristics was focused on again and it revived. Omachi is usually grown in Okayama Prefecture, so the rice that is used to brew this bottle is not made in Akita. However, the brewery decided to use Omaci. They believe it has a good effect on local farmers.
