Tasting Comment

You feel the flavor of tropical fruits. When you drop it in your mouth, the sweetness and the juiciness of tropical fruit spread. You also feel the comfortable acidity. Even though the alcohol percent is lower than other Japanese Sake, you feel the body is rich. It has a good structure. Some say this bottle is too sweet as Japanese Sake, but the sweetness and the acidity balance well. Who is familiar with botrytis wine would love this bottle.

As this bottle has the comfortable acidity, you can enjoy with heavy dish. Tempura or Wagyu will be a good partner.

Grilled sausage perfectly parts with this bottle. I tried it with plain Johnsonville. The acidity washes up the oily tastes and the flavor lasts long.

The tips of this Ippon

This brewery is located in Akita Prefecture. Recently, people know there are a lot of good Japanese Sake breweries in Akita. However, in old days, Akita was thought it was not a proper area to brew good Japanese Sake because it was too cool for yeast. The birth of Yeast No.6 changed all. It could brew tasty Japanese Sake in cold areas. The 5th owner of this brewery found Yeast No.6 in 1930. 8th owner, who succeeded the brewery in 2012, decided that the brewery would brew their Japanese Sake only with No.6 yeast. After he had succeeded, he pushed up the brewery higher stage. The brewery originally was famous for brewing high quality Japanese Sake. He keeps on producing innovative products. He founded PRIVATE LAB and made tries and errors. This bottle is a product that was released from the lab. The method that is used for this bottle is different form the ordinary one. This type of Japanese Sake is called “Kijo-Shu.” This method costs more, but can brew sweet and elegant Japanese Sake with the thicken texture.
