This is because they know the fresh acidity brings out the flavor of dish. The industry of Japanese Sake is a man world. It is very old industry. However, their top of brewing is now a female. She took over it in 2018. At that time, she was 22 years old. Their team collaborates with each other, beyond gender and career, age. This bottle is really easy to enjoy. It is natural and tasty.
