Tasting Comment

The flavor is modest. You just feel citrus. When you drop it in your mouth, you will be surprised at how sharp and smooth it is. The taste is really pure. If you move it all around your mouth, you feel the flavor of lemon and herbs, and minerals. However, the charm point must be the sharp and smooth taste. I have never experienced this type of Japanese Sake. It is very unique.

This brewery is located in Ube, Yamaguchi Prefecture. It was established in 1888. As Japanese Sake became unpopular in Japan, the brewery faced hardship. Japanese people started to enjoy beer or wine, instead of Japanese Sake. 5th owner took over the brewery in 2001. He tried to change the situation. He learned the way of wine brewing and found a potential in Junmai-Shu. He made an effort and “Taka” was born in 2002. “Taka” was developed to be enjoyed with dish. Yamaguchi Prefecture is famous pufferfish. Pufferfish has a dangerous poison, but is known for the good taste. You can enjoy pufferfish if you cook in a proper method. It is prohibited that amateurs cook it. It needs a professional license. This bottle must bring out the charm of fresh seafood.
