This brewery is located in Aichi Prefecture. Their concept is “Japanese Sake not for prizes, but for good taste.” They try to bring out the original charms of rice as possible, and push up the reputation of Japanese Sake in the global market. They also make an effort for enabling rice producers to see possibilities in their Japanese Sake. The brand name GIKYO comes from their attitude. GIKYO means chivalry in Japanese. There was a time when the price of Japanese Sake rose rapidly. But, they kept their price for retailers based on the original contract. The retails appreciated it and offered this honored name. They usually use Yamadanishiki for brewing. But, this bottle is brewed with Gohyakumangoku. It is produced in Toyama Prefecture. They were impressed the rice producers’ attitude in that area. They decided to brew only one tank with the rice in order to help their rice production.
