Tasting Comment

You feel the sweet flavor of rice. When you drop it in your mouth, the first attack is sweet. And, you find the slightly sparkling bubbles and the acidity. The bitterness comes after them and it balances the all tastes. Although this Japanese Sake is sweet, you will feel it light. I recommend you should enjoy this Japanese Sake as an aperitif. The sweetness and the sparkling bubbles refresh your mouth.

The tips of this Ippon

This brewery was founded in 1689. The owners had hired “Touji”, the meister of Japanese Sake brewing. “Touji” is like Enologo in Italy Wine world. However, they decided to stop hiring “Touji” and to brew their own Japanese Sake. This Japanese Sake is usually released in February. In Japan, February is the beginning of spring. This bottle label is pink and it must represent Cherry Blossoms, Japanese national flower. I recommend you should enjoy this Japanese Sake in spring. This Japanese Sake is Namazake, which Sake yeast lives in. So, if you doesn’t save it in cold, the tastes will easily change. I recommend you should save it in a refrigerator.
