Tasting Comment

You feel the flavor of green apple and citrus. When you drop it in your mouth, the sweetness of rice and the freshness like green apple spread. You also feel some acidity and bitterness. The tastes gradually change. As temperature roses in your mouth, Umami increases. All tastes are well balanced. You can also enjoy it in warm. Umami and the sharpness are emphasized. If you open the bottle and preserve it for a few days, the taste is matured. It becomes milder and rounder.

The tips of this Ippon

This brewery is located in Aomori Prefecture. It was founded in 1878. They have two brand line. One is “Denshu,” the other is “Kikuizumi.” “Kikuizumi” is the brand that they have been brewing since their foundation. It won gold prize many times in National Japanese Sake Contests. “Denshu” was born in 1974. It was their desire that they would brew stately Japanese Sake based on the Japanese Sake origin. It passed 3 years when they released a first bottle since they had started the development. Denshu is made from only rice. It is common to add brewing alcohol to brew Japanese Sake at that time. But, they stopped it. “Denshu” became very famous not only in Japan but also in other counties. The name of “Denshu” represents their brewing style. “Den” means rice paddy. “Shu” mean Sake. So, the name shows it was made from only what grows in rice paddy.
