You feel the flavor of citrus. When you drop in your mouth, the sweetness, the acidity and the bitterness spread. They are well harmonized. The higher class Dassai is more sophisticated. But, this Japanese Sake is more familiar. And, you can enjoy the taste of rice more. I think this Japanese Sake represents the style of Dassai mostly. This is tasty. It is easy for everyone to enjoy. “The good Japanese Sake is Japanese Sake that everyone can enjoy. There is no reason.”  This is the concept of Dssai.

Dassai is the lineup name of this brewery. 45 stands for how rice is polished. In Japan, polishing ratio is the one of important factors that classifies the level of Japanese Sake. Dai-Ginjo-Shu/Junmai-Daiginjou-Sh, Tokubetsu-Honjozo-Shu/Tokubetu-Junmai-Shuu, Gijo-Shu/Junmai-Ginjou-Shu, Honjozo-Shu/Junmai-Shu. Each of polishing ratio is 50%, 60%, 60%, 70%. Dassai 45 is Junmai-Daiginjou-Shu, so its polishing ratio, 45%, is in the standard. This Japanese Sake is the entry bottle of Dassai. The entry bottle of Dassai had been Dassai 50. However, the brewery decided to provide Dassai 45 as their entry bottle. They desired that everyone was able to enjoy tasty Japanese Sake more easily. I recommend this bottle for Japanese Sake beginners. It is easy to enjoy.
