Tasting Comment

You feel the flavor of yogurt. When you drop it in your mouth, the first attack is the fresh acidity. You also feel some juiciness of fruit in it. The finish is the flavor of yogurt. The taste is pure and clear. Even though this bottle is brewed in Kimoto, it is not so deep in taste. The body is light. It is hard to find bubbles by my eyes, but you feel them when you drink. It is better you should enjoy this bottle like fresh and light white wine.

This brewery is located in Akita Prefecture. Recently, people know there are a lot of good Japanese Sake breweries in Akita. However, in old days, Akita was thought it was not a proper area to brew good Japanese Sake because it was too cool for yeast. The birth of Yeast No.6 changed all. It could brew tasty Japanese Sake in cold areas. The 5th owner of this brewery found Yeast No.6 in 1930. 8th owner, who succeeded the brewery in 2012, decided that the brewery would brew their Japanese Sake only with No.6 yeast. After he had succeeded, he pushed up the brewery higher stage. The brewery originally was famous for brewing high quality Japanese Sake. He keeps on producing innovative products. “Colors” is the brand name which is brewed with only rice that is produced in Akita. 5 labels are listed as “Colors.” The different breeds are used to each bottle. They polish each rice to different ratios to make the most of each charm. This bottle is brewed with “Akita Sake Komachi.” The concept of this bottle is an entry model. So, this bottle is not expensive. When you find it, you should try at once.
