This brewery is located in Tottori Prefecture. “Goriki” is a rice brand that is only produced there. Because it was very difficult to grow it, farmers stopped to grow it in 1950s. But, “Goriki” came in a spot light again in 1980s. People focused on it because it allowed them to brew strong and tasty Japanese Sake. This brewery made an important role to revive it. This bottle is made from “Goriki.” Now it is allowed for breweries only in Tottori Prefecture to used it to brew. And, they polish rice to brew this bottle to 50%. It is usual that breweries name their bottle “Daiginjo-Shu” when they polish rice to 50%. But, this brewery names this bottle “Ginjo-Shu.”
