Tasting Comment

You feel the flavor of melon. When you drop it in your mouth, you firstly find it very pure. The well-round sweetness of rice and some bitterness and acidity follow. They are well harmonized. The finish is long. This Japanese Sake represents what is “Daginojo-Shu.”

Sweet-Dry: 2/5 (1 is sweet, 5 is Dry)

Fruity-Acid: 3/5 (1 is Fruity, 5 is Acid)

Light-Bold: 3/5 (1 is Light, 5 is Bold)

White fish Sashimi with citrus source will part well. Soy source may be too strong and kill the charm of this Japanese Sake flavor.

Oyster with lemon will also be a good partner.

The tips of this Ippon

Buko Shuzou is located in Chichibu, Saitama Prefecture. It is not famous, but it is one of the breweries that are easy to access from Tokyo. I visited this brewery as one of optional tour of a small trip for Chichibu. It usually holds a sightseeing tour, but did not hold it due to Covid 19.  However, they run a shop in their brewery. I went there and bought this bottle. The shop holds tasting room. You can try some bottles and get advice. It was really a nice experience. If you have a chance to visit Chichibu, you should visit this brewery.
