Tasting Comment

You slightly feel “Ginjou-smell” and citrus. The flavor is not strong. When you drop it in your mouth, you must be surprised at how smooth the texture is. It is soft, mild and transparent. However, it includes some bitterness, which sharpens the taste. The well-round sweetness and “Ginjou-smell” last long. This Japanese Sake is rich and elegant. It is hard to imagine who don’t like it. You can enjoy it both with dish and alone.

Their brand name, “BORN”, comes from Sanskrit. It means “To make the truth”. Their Japanese Sakes are often served at royal or important government banquets. They won a lot of domestic and international contests many times. The concept of this bottle is to reflect the season changes. The color of the chinse character in the label will change. If you look at it from the front, it looks silver. However, if you look it from the side, the color will be iridescent.

They age this Japanese Sake under 0 degrees Celsius for a year. This process makes its tastes matured and harmonized. They age all of their Japanese Sakes at least 1 year under cold temperature. The longest is aged more than 10 years. This may be the key of their Japanese Sake charms. I recommend this bottle to the beginner of Japanese Sake. This is one of the bottles that I love most.
