Tasting Comment

You feel the flavor of yellow peach. The viscosity is not so heavy. When you drop it in your mouth, well-round sweetness, comfortable acidity and a little bitterness spread it in your mouth. The texture is smooth. This Japanese Sake style is clear and basic. But, it doesn’t mean this Japanese Sake is mediocre. The quality is astonishingly high if you consider the price. I think this Japanese Sake is a good entry bottle for Japanese Sake World. The brewery recommend that you should enjoy this Japanese Sake in cold. However, it is worth you try it in warm.

It will part with most of Japanese foods, except for oily ones.

Cheese is a good partner. I tried Mimolette, Gouda and Comte cheese with it. This Japanese Sake parts with them well.

The tips of this Ippon

Their brand name, “BORN”, comes from Sanskrit. It means “To make the truth”. Their Japanese Sake bottles are often served at royal or important government banquets. This Japanese Sake was developed to celebrate the birth of a new royal family member. The bottles that are served at royal or important government banquets are really expensive. So, they developed an entry bottle that ordinary people could enjoy. This Japanese Sake won a lot of domestic and international contests. They age this Japanese Sake under 0 degrees Celsius for 1 year. This process makes its tastes matured and harmonized. It also generates the fresh fruits flavors. They age all of their Japanese Sakes at least 1 year under cold temperature. The longest is aged more than 10 years. This may be the key of their Japanese Sake charms. You can also enjoy the color of this bottle. The blue will be a good accent on the dinner table.
