Tasting Comment

The gorgeous flavor of fruits, “Ginjo-smell”, smells form the glass. The flavor is close to fresh white peach. When you drop it in your mouth, you feel the sweetness of white peach, the acidity and minerals. It is also bold and spicy. This Japanese Sake has a unique character, but they are well harmonized. I recommend you should enjoy this Japanese Sake in cold or cool. If you make it warm, you can enjoy the taste of rice more. But, you also kill the best charm, the flavor of white peach.

Taste Chart

Fruity-Acid: 4/5 (1 is Fruity, 5 is Acid)

This Japanese Sake has the boldness and the sharpness, so I recommend you should enjoy it with spitchcocked eels. You can also enjoy it with Tempura or Sukiyaki. Heavy taste dish will be a good partner.

Pickled small herring, local Okayama Prefecture food, will part with this Japanese Sake.

The tips of this Ippon

Akaiwa-Omachi is the brand of this brewery. “Omachi” is a rice brand name. It was originally in the main stream of Japanese Sake brewing. It was said in old days, “If you don’t use “Omachi”, it is impossible to win Japanese Sake Contests.” However, the production of “Omachi” decreased because it was hard to grow. “Omachi” gradually became endangered species. This brewery revived “Omachi”. The brewery is located in Okayama Prefecture that was famous for the production of “Omachi”. So, they tried to brew Japanese Sake of “Omachi” again. Their principle is that their Japanese Sake must represent the characters of local area. They use rice and materials that are produced in local area, and brew Japanese Sake under local climate. Their challenge succeeded. These days, famous breweries used “Omachi” to brew Japanese Sake. This bottle is the symbol of the rebirth of “Omachi”.
