Tasting Comment

You feel the flavor of citrus and melon, a typical Ginjo-Smell. When you drop it in your mouth, the clear and mild sharpness and umami of rice spread. It is not heavy, but bold. Finish is not so long, but all tastes are well balanced. You can enjoy this Japanese Sake without being sated with. When you make it warm, umami will be emphasized more.

The tips of this Ippon

This brewery is located at Owari, Aichi Prefecture. Owari is famous for the hometown of Nobunaga Oda, a legendary general in Warning Era. Owari holds Kiso River that pours one of finest water in Japan. The water of Kiso River belongs to soft water, but it contains some minerals. It is said that the taste of Japanese Sake become pure, clear and mild when soft water is used. So, the style of this Japanese Sake is mainly affected by the water of Kiso River. The brewery also carefully selects rice. They only use Yamada-Nishiki that is produced special area A in Hyogo Prefecture.
