Kokuryu, Hiirazu, Junma-Daiginjo Nama-Zake, Polished Ratio 35% (Kokuryu Sake Brewing Corporation)

Tasting Comment

You slightly feel the flavor cherry and apple. When you drop it in your mouth, you must be surprised at how smooth and sweet it is. You don’t feel any friction. It just flows into your throat in a second. It is like snow melt water for who in desert. As time goes by, the sweetness begins to emerge. Even though it is very sweet, it is elegant. The flavor of cherry and some bitterness come last. What is astonishing most is the balance of each taste. Crisp, smooth, sweet, bitter. All tastes are harmonized in a high level.

The tips of this Ippon

This brewery was founded in 1804. They are located in Fukui Prefecture. It holds a lot of snowy mountains that pour finest water. So, the feudal lord enhanced Japanese Sake brewing in old days. They are descended from the stream. They keep passing on the tradition, but they also tried to be an innovator. They tried and succeeded in producing Daiginjo as a commercial product. This bottle is one of the top seven bottles. They name it “Extreme Series”. Only this bottle in the seven is Nama-Zake. It is released in only February and produced limited quantities. It is very lucky I got it this year. They pay attention to the details. The bottle is beautiful blue and cap is also made the same color glass. When you open the cap, it sounds like you open a luxury champagne cork. It is very comfortable. When you find this bottle, you must by it.
